A Colourful Lunch

Today’s lunch is a quick salad with rocket, home-grown parsley (easy to grow indoors as well as outdoors), spring onion, lightly boiled broccoli to retain some crunch, fried tofu and tomatoes. Top with some toasted seeds (toasting the seeds brings out the flavour better)!

It’s a joy to eat colourful food!

Easy and delicious!
